Zesty Pot Roast – In Your Crock Pot

You may have noticed that I am absolutely obsessed with cooking in my crock pot. You know what? Crock pot cooking is cool. It’s also an easy way to get a home cooked, healthy dinner on the table when you’ve got kids, work and who knows what else to take care of today! And yes, I do realize that I have a fantabulous crock pot pot roast that I’ve already shared with ya’ll. But this week I was inspired by one of the members of The Mommyhood Project Forum who absolutely raved about putting horseradish on her pot roast before tossing it in the crock pot. So obviously, I had to throw together a little recipe to try this trick. It’s a zestier version of my original. It’s pot roast with a kick. And it’s absolutely delicious.

First: Toss your roast into the crock pot. Season with salt, pepper and onion powder to taste.

Next: Add 1 cup of water, three boullion cubes and three cloves of garlic, chopped.

One of my least favorite things in cooking is peeling and separating garlic. So instead, I just buy a big resealable bag from Sam’s Club and then the hubs will food save it in sections. Supa dupa easy!

Now, Add a small can of tomato paste. Try to keep it to the side of the pot roast like this:

Using a spatula, slather that roast with horseradish sauce. Mmmmmmmmm I can imagine the deliciousness already!

Now use the tomato paste can to hold all of your utinsils. This means you won’t dirty a spoon dish – aka less dishes later on. Always a good thing.

Now chop up some veggies. I use carrots and celery – you could also add onions (which I love but give Ricky serious heartburn) and potatoes (I like my potatoes mashed and on the side).

Now let it cook on high for 6 hours. You can cook it on low for 10-12 hours – but I don’t make it into my kitchen early enough in the day (besides for coffee) to make that happen. Remove. Serve with these amazing mashed potatoes. Devour.

Zesty Pot Roast

What you’ll need:

2-3 lb roast
salt, pepper and onion powder to taste
1 cup water
3 beef boullion cubes
3 cloves garlic, chopped
1 small can tomato paste
LOTS of horseradish, amount depends on how big your roast is
Chopped veggies – carrots, celery, onions, potatoes…whatever your little heart desires!

1. Place roast in crock pot. Season with salt, pepper and onion powder to taste.
2. Add water, boullion cubes and garlic to pot.
3. Add tomato paste to the side of the roast – see picture above.
4. Slather that roast in horseradish sauce
5. Toss in all your veggies.
6. Cook on high for 6 hours (or low for 10-12 hours)
7. Enjoy the delectableness!
