Pulled Chicken BBQ Sandwiches – Super Duper Easy!

I am starting to think of myself as slightly obsessed with my crock pot. Oh well. My obsession is your gain, my friends! This is one of my go-to recipes, because we always have the ingredients on hand and it’s super duper easy to make!

You’re going to need a total of three things: your crock pot, some chicken and your fave bbq sauce. We go through a lot of the stuff at our house – and tend to buy in bulk. What can I say? I like things to be a little saucy.

Usually I would use about a cup of sauce per two chicken breasts (or in this case, one GIGANTIC chicken breast). But I went a little overboard. And while these did turn out delish, they were a little messy. So choose your sauce amount wisely.

Cook your chicken on LOW for six to eight hours. When it’s almost done (slash when you’re about 20 minutes out from dinner time), pre-heat your oven to 400 degrees.

Put your kaiser rolls in the oven to toast them a little. While they’re warming, use two forks to shred the chicken into the sauce. My mouth is watering just looking at this picture…

Take your rolls out of the oven and add a little mayo. The hubs likes his mayo – so I slather both sides of the bun for him. You could do just one, if you’re not as much of a Hellman’s fiend.

Add the chicken. Savor. Enjoy. Amaze yourself with how delicious your homemade dinner is – and how simple it was to make!

Pulled Chicken BBQ Sandwiches

What you’ll need:

Crock pot
2 regular chicken breasts (or 1 very large chicken breast)
3/4 to 1 cup BBQ sauce
Kaiser Rolls
Mayo (my hubby likes Hellman’s, but use your own fave brand!)

1. Add BBQ sauce and chicken to crock pot.
2. Cook on low setting for 6-8 hours.
3. About 20 minutes before eating, preheat your oven to 400 degrees.
4. Place kaiser rolls in oven.
5. Using two forks, shred the chicken in the sauce (in the crock pot)
6. Remove rolls from oven. Add mayo.
7. Add chicken to the rolls.
8. Enjoy!

    Yum! I think I might love bbq sauce just as much as you do 🙂 My mouth is watering just looking at those pictures. I am definitely making this recipe. With only two ingredients and a crockpot I am pretty sure I can make this even while wearing a gripey baby who has been teething for the past two months and still has no teeth to show for it. Thanks for the recipe and idea!

      Lol – bbq sauce is the best! If you live in the Twin Cities, the hubs and I got some amazing wings in a Carolina BBQ sauce from Wild Bill’s this weekend. Seriously the best wings (and bbq sauce ON the wings) I’ve ever had!
