OMG Deliciousness: Pumpkin Cookies

If you’re like me, you have a serious obsession with anything that includes the word “pumpkin” in it. Especially at this time of year. So the other day I was sitting here giving my little guy a bottle and I realized: pumpkin cookies sounded like the most delicious thing to pair with my coffee EVER. And since they have pumpkin in them, I can justify them as being healthy. Right? Yep, thought so. And then began my quest for an amazing pumpkin cookie recipe. After my first batch of pumpkin bread this year turned out like crap, I’ve been much more careful with the pumpkin recipes I select – because rubbery baked goods = trash.

And then I came across a decent sounding pumpkin cookie recipe. Which I tweaked a little – and what came out where the most delicious accompanyment for my morning (all day?) coffee. Now, these cookies are super soft and almost like a mini slice of pumpkin bread goodness in your day. And if you’re not careful, you’ll end up eating fifty-seven of these things in one setting. They’re that good.

In your mixer, combine 1/2 cup Crisco, 1/2 cup sugar, 1/2 cup brown sugar, 1/4 cup molasses, 1 egg and 1 cup of pumpkin puree. Mix until well combined.

In a separate bowl, use a whisk to combine 2 cups of flour, 1 teaspoon of baking soda, 1 teaspoon of all spice, 1/2 teaspoon of cloves and 1/2 teaspoon of nutmeg.

Add to the pumpkin mixture and mix until it looks like this.

Mix in 1/2 cup of milk.

Take a second to enjoy the view – especially if you have a child that’s been strapped to your chest while you’ve been throwing this fun little treat together…

Set up your cookie baking station by putting parchment paper on your cookie sheets. And yes, the coffee is certainly necessary.

Using two spoons (one to scoop out of the bowl and one to push the dough off of the other spoon onto the cookie sheet), make one inch drops of dough onto the cookie sheet. Bake at 350 for ten to twelve minutes, until the cookies have the same top appearance as fully baked bread.

And of course, who would get distracted while baking to start decorating for Christmas and take a million photos of their dog? Why, this girl would! So my lovely Instagram final picture will have to do. These things are seriously delish. Aka I may be making several batches of them this week.

Pumpkin Cookies

What you’ll need:

1/2 cup Crisco
1/2 cup sugar
1/2 cup brown sugar, packed
1/4 cup molasses
1 egg
1 cup pumpkin puree
2 cups flour
1 tsp baking soda
1 tsp all spice
1/2 tsp cloves
1/2 tsp nutmeg
1/2 cup milk

1. Preheat your oven to 350 degrees.
2. In a mixing bowl, combine Crisco, sugar, brown sugar, molasses, egg and pumpkin puree until well mixed.
3. In a separate bowl, whisk together flour, baking soda, all spice, cloves and nutmeg.
4. Add the flour mixture to the pumpkin mixture. Mix well.
5. Add in the milk until well combined.
6. Place parchment paper on your cookie sheets.
7. Use two spoons to drop one inch “balls” of the dough onto the cookie sheet.
8. Bake until done, about 10-12 minutes.
9. Enjoy. And attempt to distract yourself from eating the entire batch in one sitting!

    I LOVE pumpkin too, Cortney ~ especially this time of year!
    I don’t drink coffe (unless it’s decaff), but these cookies sound/look delectable!!

    I made pumpkin pancakes for breakfast on Sat. morning ~ yummmmmm!!!!
